Traceability is vital in our endeavours to
provide the best in fresh produce, locally reared meats and game.
Seasonal is our philosophy and the Vale offers an abundance of fresh
produce grown by small holdings and larger businesses, throughout the
year.
Of course fish features on our menu selection and using the services of an experienced third party who has
the knowledge to source the best catch is important in ensuring the dish
is "sea-fresh"characteristic.
